No animal products are used, making this recipe 100% cruelty free! Meatless crumbles mixed with sauteed cabbage and mushrooms and melted vegan cheese will make your heart melt and your tastedbuds sizzle. Topping off these delicious delights we use a homemade babaganoush and homemade kale pesto and fresh avocado with lime to give a tangy, unique kick that will leave both your stomach and conscience happy and healthy.

Plant-Based Vegan Taco Filling

INGREDIENTS:

PREPARATION:

  1. Sautee mushrooms with onion & cabbage in a pan, covered.
  2. Heat oil in a skillet.
  3. Lower heat, add plant-based crumbles.
  4. Add finely diced tumeric & ginger to both.
  5. Sprinkle in ground cumin & squeeze lime juice.
  6. Add diced tomato into skillet with crumbles.
  7. Melt vegan cheese into filling.

Avocado & Lime Topping

INGREDIENTS:

  • 1 Avocado
  • 1 Lime
  • 1/4 tsp Ground Cumin
  • Salt & Pepper

PREPARATION:

  1. DICE UP THE AVOCADO. 
  2. SQUEEZE LIME JUICE ON TOP.
  3. SPRINKLE GROUND CUMIN OVER TOP AND MIX IN. 
  4. ADD SALT + PEPPER TO TASTE.

Homemade Babaganoush & Kale Pesto Fillings

Now as for the homemade Babaganoush and Kale Pesto, I usually have these already prepared and stored in the refridgerator. That way I can enjoy them at a moment’s notice when I know they’ll compliment a dish I’m preparing. Furthermore, it decreases total preparation time for meals like this one that you generally want to be quick & easy.

Homemade Babaganoush

INGREDIENTS:

  • 2 Eggplants
  • 1 Clove Garlic
  • 1/2 Cup Tahini
  • 1 tsp Ground Cumin
  • 1 Lemon
  • Salt & Pepper

Preparation:

  1. Roast eggplants in the oven on 350 F for 30 minutes.
  2. Fire sear eggplants using a torch or gas stovetop.
  3. Puree eggplants together with clove of garlic, tahini, ground cumin, & juice from a lemon.
  4. Salt & pepper to taste.

Homemade Kale Pesto

INGREDIENTS:

  • An Onion
  • 1 Clove Garlic
  • One Bunch of Fresh Kale
  • 2 Cups Toasted Walnuts
  • 1 Cup of Oil (Of Your Choice)
  • 1 Lemon

Preparation:

Puree onion, clove of garlic, bunch of fresh kale, and toasted walnuts together with oil of your choice and the juice from a freshly squeezed lemon.

Putting It All Together

First, take the tortillas of your choice and warm them up. Then spread the homemade Babaganoush & Kale Pesto side by side on the tortilla. Next, add the meatless crumbles and veggie fillings. Finish it all off with the avocado & lime topping. That’s it! Time to enjoy your delicious plant-based, vegan tacos!!!
